Instructions

  1. Step 1
    Whisk 2 ½ cups flour and 1 tsp salt. Cut in 1 cup very cold, cubed butter until pea-sized. Gradually add ½ cup ice water, 1 tbsp at a time, mixing until dough just comes together. Divide dough, form into disks, wrap, and chill for at least 1-2 hours.
  2. Step 2
    Peel, core, and thinly slice 6 medium apples. In a bowl, toss apples with ½ cup granulated sugar, ¼ cup light brown sugar, 2 tbsp flour/cornstarch, 1 tsp cinnamon, ¼ tsp nutmeg, optional ⅛ tsp cloves/allspice, and 1 tbsp lemon juice. For best results, melt 2 tbsp butter in a saucepan, cook apple mixture for 8-10 mins until slightly soft and juices thicken. Cool completely.
  3. Step 3
    Preheat oven to 400°F (200°C) and line baking sheets with parchment paper. Roll out one chilled dough disk to ⅛-inch thick. Cut out 3-inch circles for bases and place on baking sheets. Repeat for pie tops, choosing full top (with vents), lattice, or decorative cut-out designs. Spoon 1-2 tbsp of cooled apple filling into the center of each dough base, leaving a ½-inch border. Fill each dough-lined cup with the apple mixture. Place chosen top crust design over filling and crimp edges to seal. Whisk 1 egg with 1 tbsp milk/water for an egg wash. Brush tops of pies with egg wash and optionally sprinkle with granulated sugar.
  4. Step 4
    Bake in preheated 400°F (200°C) oven for 15 minutes. Reduce oven to 375°F (190°C) and bake for an additional 20-30 minutes, until crust is golden-brown and filling is bubbly. Cool on baking sheets for 10-15 minutes, then transfer to a wire rack to cool completely.
  5. Step 5
    Serve warm or at room temperature, optionally with ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerated for 4-5 days. Reheat refrigerated pies in a 300°F (150°C) oven for 10-15 minutes. To freeze: once cooled, freeze solid, then transfer to a freezer-safe bag for 2-3 months. Reheat from frozen at 350°F (175°C) for 20-30 minutes.
