  • 16 oz full-fat cream cheese, softened
  • ½ cup + 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • 1 ½ cups fresh strawberries, finely diced, divided
  • 12-15 standard eggroll wrappers
  • 2 tbsp all-purpose flour
  • 2 tbsp cold water
  • 4-6 cups vegetable oil (for deep frying), or non-stick spray/melted unsalted butter (for air frying/baking)
  • 1 cup powdered sugar
  • 2-3 tbsp milk (or heavy cream/lemon juice)

Instructions

  1. Step 1
    Beat softened full-fat cream cheese until smooth (2-3 min). Add ½ cup granulated sugar, 1 tsp vanilla extract, and 1 tsp lemon zest (if using); beat until light and fluffy (2-3 min). Gently fold in 1 cup finely diced fresh strawberries. Set aside.
  2. Step 2
    Combine the remaining ½ cup finely diced strawberries with 2 tablespoons of granulated sugar; let sit for 10-15 minutes to draw out juices.

    Whisk 2 tbsp all-purpose flour and 2 tbsp cold water in a small bowl to create a smooth sealing paste. Keep unused eggroll wrappers covered with a damp towel to prevent them from drying out.
