    Rinse and drain 1 can black beans. In a small saucepan, combine beans, 1/4 cup salsa/enchilada sauce, 1/4 tsp ground cumin, and 1/4 tsp garlic powder. Simmer over medium-low heat for 5-7 minutes, stirring occasionally, until heated through and flavors meld. Set aside.

    Warm 8-10 large tortillas until pliable. Lay one warm tortilla flat. Layer fillings in the bottom third: cilantro-lime rice, seasoned black beans, zesty lime chicken, creamy avocado mash, and 1.5 cups shredded cheese. Add optional toppings if desired. Do not overfill.

    Fold the bottom edge of the tortilla up and over the filling, tucking it tightly. Fold in both the left and right sides towards the center. While holding sides firmly, tightly roll the burrito upwards from the bottom into a compact cylinder.

    Heat 1 tbsp olive oil or cooking spray in a large non-stick skillet over medium heat. Place assembled burritos seam-side down in the hot skillet. Cook 2-3 minutes per side, or until golden brown and crispy. Turn to ensure all sides are browned.

    Remove burritos from skillet. Serve immediately, whole or sliced diagonally, with extra salsa, hot sauce, or sour cream if desired. Enjoy!
